Fried Chicken & Waffles with Amarula Hollandaise

Ingredients

Fried Chicken

⅓–½ cup  (80–125ml) 

 Amarula Cream

 chicken pieces

½ cup  (125ml) 

 cake flour

1 tsp (5ml) 

 salt

2 tsp (30ml) 

 smoked paprika

1 tsp (5ml) 

 onion powder

1 tsp (5ml) 

 garlic powder

 

 oil, for deep-frying

 

Waffles

1 cup  (250ml) 

 cake flour

¼ cup  (60ml) 

 cornflour

2 tsp (10ml) 

 baking powder

2 tsp (10ml) 

 white sugar

¼ tsp  (1.25ml) 

 salt

1 cup  (250ml) 

 milk

 eggs, beaten

1 tsp (5ml) 

 vanilla

2 Tbsp  (30ml) 

 melted butter

½ cup  (125ml) 

 grated mature Cheddar cheese

2 Tbsp  (30ml) 

 finely chopped chives

 

Amarula Cream Hollandaise

 egg yolks

1 Tbsp  (15ml) 

 lemon juice

to season 

 fine salt

½ cup  (125ml) 

 clarified butter

2 Tbsp  (30ml) 

 Amarula Cream

 

To Serve

hot sauce, dill pickles, slaw or salad

Method

Fried Chicken

Combine the Amarula Cream and chicken pieces and place in the fridge for 4–5 hours, or overnight.

Combine the cake flour, salt, smoked paprika, onion powder and garlic powder in a small mixing bowl.

Remove the chicken from the Amarula Cream and pat dry.

Coat the chicken pieces in the flour mixture then deep-fry in hot oil until cooked.

 

Waffles

Combine the cake flour, cornflour, baking powder, sugar and salt in a mixing bowl.

Make a well in the centre of the dry ingredients then add the milk, eggs and vanilla.

Whisk until there are no longer any lumps in the batter then add the butter, grated Cheddar and chives.

Preheat the waffle iron and cook the batter until golden-brown.

 

Amarula Cream Hollandaise

Heat water in a small pot and let it simmer over a low heat.

Place the egg yolks, lemon juice and salt into a heat-proof mixing bowl.

Set the bowl on top of the pot with simmering water, making sure that the bottom of the bowl doesn’t touch the water, then whisk the ingredients together until the mixture doubles in volume – it will look lighter and thicker.

Slowly incorporate the clarified butter with a whisk in a slow, steady stream. If the mixture gets too hot, remove it from the heat and continue adding the butter.

Add the Amarula Cream. Add a tablespoon or two of cold water if you feel like the Hollandaise is too thick, then set aside.

 

Serve the fried chicken on top of the waffles with the Amarula Cream Hollandaise, hot sauce, dill pickles, slaw or salad.

 

Cook’s Note

If you don’t have a waffle iron, you can make flapjacks using a frying pan. You can deep fry the chicken and then put it into the oven to cook through completely, depending on the size of your chicken pieces.
